These all came out long before supply chain woahs in the last 3 years, Apple has struggled to keep the most popular models stocked since then. Also every year the iPhone becomes more complex - bigger camera sensors, faster and brighter screens, industry first smaller processor nodes, denser batteries, etc. - so initial yields will be lower until they perfect the manufacturing processes for new technologies.
