I LOVE unagi don. I agree it's a shame it's overlooked in the west.
It is NOT overlooked. Just out of fashion at the moment. Look up London Eel Pies. Staple food of the poor for centuries in Britain.
Besides, I do a mean crumbed eel fillet with sharp sauce myself. Also stewed eel and smoked eel is wonderful in a salad.
this is a very cute bit
