Atheist lich that wants to live forever because he doesn't believe in an afterlife and isn't bothered by eating souls because he doesn't believe they exist.
Small nitpick: if you are eating it you know it exists, or else you couldn't be eating it.

if you don't believe in eternal souls, you can assume you're eating something, just not a soul.
