black forest ham, cheddar, apple slices, bread & butter chips, lettuce, mayo & dijon on country wheat with the crusts removed

Apple slices are an underutilized sandwich constituent. They do go really well with Dijon mustard, for some reason that I can't quite explain.

Today agree. Gives a great texture and light sweetness. They are a staple building block at my house but I’ve only seen them in specialty sandwiches IRL.
