My wife used to own a bakery and always said you’re not actually supposed to eat the fondant. It is “edible” but she recommended treating it like a decorative wrapping paper.

Hmm. Than why not just actual paper or similar? That's a lot of sugar to throw away.

Too be fair it's less fondant than a lot of aesthetics-first cakes purely because it isn't 100% coated in a base layer. But yeah, agreed.
