Looking for manga similar to

Because I really enjoy them and they are wholesome and explores the mc's exploring their own gender identity after they have been transformed

I do prefer ones where the mc's become female

I haven't read the manga for Kashimashi, but I enjoyed the anime. It had a depressing overtone however.

Also there's chobits, it's not a gender bender but it is about a sentient robot learning to be a woman.
