Vampire Hunter D: Bloodlust (2000) and Hellsing Ultimate (2005) are both amazing vampire animes and I highly recommend either one. The animation style in both is incredible. But be aware that they each have earlier animes (Vampire Hunter D in 1985 and Hellsing in 2001) which aren't as good. I'd watch Bloodlust and Ultimate first and only watch the originals if you want more.
Also, I really just wanted to see if there were any Vampire Knight or Trinity Blood fans out there that I could annoy with this question.
Trolling to suggest Vampire Dormitory, but Interviews with Monster Girls brings a cute slice of life aspect to the genre.
I have the Vampire Bund box set somewhere but bought it more out of commitment to the franchise than to actually figure out how to play a BD on a Linux PC.
Seriously, there's so much more to explore than just action. I can imagine a modern vampire character bring frustrated by the world seeing his culture as nothing but violence and a specific native cuisune and turning it into a comic rant or an entire arc of exploration and worldbuilding.
