Because there hasn't been a 100 year old consumer culture surrounding Native American cuisine. There's never been an indigenous celebrity chef, there's never been a "Brit-cool" era for Native Americans, there's never been any kind of pop culture connection to food whenever Native Americans are discussed or displayed. The reason why we love Italian, Chinese, Mexican cuisine is immigration and media. America tried to exterminate its native population and almost succeeded.
