I know the official client isn't done, but are people finding success with the unofficial clients? Any good experiences?

Absolutely, I've made one trade on it myself and it went through with no problems. And I am also very much helping to improve the software. Little by little.

Edit: The official client will never be done. It will remain for testing purposes only because the developer does not want to run a network for legal considerations. Look for Samurai to see a good reason why.

Edit: At absolute most, the official client may allow you as the user to input which network you would prefer to be on, but they will never run a network themselves.

He can make a client which allows the user to input the network? Frees him from legal obligations

That is being worked on in issue #1073
